Furlough: 59 of 365

(This is blender pumpkin pie. I followed this recipe except that I used pumpkin and squash that I roasted and/or boiled and froze last fall, I upped the pumpkin to 1.5 cups to replace the oil and liquid in the agave syrup, changed said syrup to 3/4 c sugar, used regular salt, grabbed 1/2 c of whatever gluten free flour we had, and in place of pie spice used 1/2 t. cinnamon, 1/4 t. ginger, and 1/8 t. cloves. I did still use 2 eggs, 2 tsp of vanilla, and 1 c milk though. So I guess I alluded to the recipe. But I did make it in a blender and only had to wash a blender. And it did taste fantastic and make its own crust. I figure as long as I have the right spices and some type of pumpkin/squash/gourd, I can make this stuff anywhere.)


In anticipation of a possible furlough, pay cuts, etc., we're cleaning out the freezer to save a little more. The possibility of losing paychecks was driving me nuts but now I have decided to just go with it and do the best we can. I know lots of Americans have lost jobs or taken pay cuts and found a way to make it through. We can do the same. We've done the underemployment thing before so it's not like it would be a new thing.

I am kind of tired of FSOs being vilified right and left though. I think the way to cut the budget should be "Hey, every agency cut 10% (or whatever %). Give us your numbers by Monday or your funding is gone." That, however, would make too much sense and be way too easy. And that is the end of the political part of my discussion here. I don't talk politics on this blog for one reason, I care WAY too much about it, pay way too much attention to it (overseas and domestically), and would bore everyone.  Okay that's three reasons. Besides lots of people address this kind of stuff much better on their blogs.

Since we're headed out soon, we needed to clean out the freezer and cupboards anyway. We try to keep about 3 months food on hand for emergencies and so we've been slowly eating it up as our time draws to a close. If we only eat what we still have stored, we've probably got 3-4 weeks worth of stuff. So it's an interesting adventure anyway. Always have to find a way to make life fun right?

This week's focus is on pumpkin. Pumpkin pudding, pumpkin custard, pumpkin pie, pumpkin pancakes, pumpkin muffins (that don't really taste pumpkiny which was a nice change). A savory pumpkin dish would be nice but every savory pumpkin dish I have tried in the past has been shot down. And my family will eat just about anything. I think next week will probably highlight beans. We have lots of dried beans to use. Now if I can just figure out a way to use beans and pumpkin together, and get everyone to like it.


FS Kids: My kids are probably some of the world's least picky eaters. Which I totally don't deserve since I was a terror growing up. It's a good thing though. Between moving all the time, allergies, lock downs, living in hotels, power outages (meaning you have to eat whatever will spoil), and other such fun, feeding them is already a bit of an adventure. Bless them for their lack of pickyness.

Read the comments for some alterations, especially in regards to subbing some of the cumin for some cayenne. I've occasionally put canned corn or beans in it, and now in reviewing the comments, see that other people do too. ITS SOOOOO GOOD. I've even made it for festival dinner parties.

Yay for non-picky eaters! My kids aren't picky, either, and it sure makes travelling easier (except for the hidden allergens/barf thing, of course).

I wonder how this would fare with egg-replacer or flax seed? I might give it a try. I've been wondering what to do with leftover cans of poumkin puree. Thanks!

Spectrummy Mummy, I don't know how this would work (let me know!) but I have a blender muffin recipe that I think would work since I used powdered eggs instead of regular ones.

my version since I don't have fancy ingredients:
Blend in blender:
-1 c pumpkin
-1/4 c canola oil
-1 egg (i used powdered, reconstituted)
-1c sugar
-1/4 t cinnamon
-1/4 t nutmeg

Mix well in bowl and then blend in:
-1/2 t salt
-1 t xanthan gum
1/2 t baking soda
-1 1/2 t baking powder
-2 c GF flour

Add:
-1/2 c soymilk (more if it is too thin)

Follow her directions for baking. Super easy and the kids gobbled em up. Here's her version:

She also suggests a tofu pumpkin pie. I have done those before with silken tofu and just cooked as a custard with no crust. It is fantastic. Seriously yummy stuff. Good luck! Let me know how the blender pumpkin pie goes with egg replacer or flax seed. I'd love to be able to do it with flax in times when we can't get eggs.

Thanks for the recipes all! I'll have to see if I can tweak them for no dairy/wheat or else make them for date night (when we sneak dairy).

Kate, I am so glad that I am not the only one with allergy pukers. People used to act like I was nuts when I watched what they got. Any restriction is fine by me if it keeps the vomiting down. And I agree on travel. Having flexible, not picky kids is great because travel food is hard enough as it is.

If you need to use pumpkin there are a lot of pumpkin curry soup recipes that are SO good. I however was not blessed with good eaters (the curse following my husband who was also a picky eater) and my kids don't eat it. Too bad for them, because I still make it!

Here is the one I have

1 tbsp olive oil
1 small onion, finely chopped
1 29oz can pumpkin
14 oz chicken broth
2 cups water
3 tbsp brown sugar
3/4 tsp curry powder
1/2 tsp salt
4 oz cream cheese, cubed (I think it would not be a problem to leave this out. It would just be thinner. And well, so would I if I left it out.)

Heat oil, and saute onion. Stir in remaining ingredients except cream cheese until well blended. Bring to a boil. Reduce heat to medium-low. Add cream cheese; cook until cream cheese is completely melted and mixture is well blended beating constantly with wire whisk.

Man after typing this out, this might be dinner tonight. Yum!

Thanks Anne! I really have no problem with salary cuts and all that. Lots of Americans have had to tighten their belts (including many of my friends and family) and I am more than willing to do my part. I just think Congress needs to take a look inhouse to cut excesses and also to apply cuts across the board in all federal agencies. The fairest thing in my view is to tell each agency, legislative entity, the armed forces, and executive entity to cut the same % from their budget. Then let the agencies decide what their priorities are and what needs to be cut to hit that % target. AND LET IT STAND.
